• Halibut is the largest edible fish in the North Sea, reaching up to 3 meters long and weighing up to 300 kgs. The halibut fishing season is from April to December.
    Halibut live in the North Sea in the vicinity of Greenland, Denmark, Iceland and Norway. As their reproduction cycle is slow, strict laws have been passed regarding how many halibut may be caught.
    Queen of the Ocean
    If salmon is considered king of the sea, then halibut is the queen. Scandinavians eat halibut on special holidays, its name in Swedish, Danish, Norwegian, German and English in fact deriving from the word "holy". In Israel, carp is served on the high holidays.
    Smoked Halibut
    The Halibut is fileted and cold-smoked up to 30°C for 6-7 hours.
    Nutritional Value
    As with other fish in the North Sea, living in temperatures of 3-5°C, halibut is rich in Omega 3 fatty acid and Vitamin D.
